More Recipes, Submit Recipes, Home Page Preparation time: 15 minutes, Servings: 40 Ingredients: - 12 oz. fresh cranberries - 1 whole lemon, quartered and chopped with skin - 1 cup celery, chopped medium/fine. - 10 oz. All Fruit Type Jelly such as Polaner All Fruit, Sorrel Ridge or Smucker's Simply Fruit; apricot, peach, raspberry, strawberry, or as you will. - 1 cup walnuts or pecans, chopped (optional). ------------------------------- If you are making it during the holiday season, consider putting some up in pretty jars with a ribbon for a festive and tasty holiday surprise gift. Use different types of fruit "jellies" in making this relish. You will find that the Raspberry will be very different in taste than the Apricot, etc. This is a cold relish but if you like a cooked Cranberry Sauce boil the relish in a stainless steel sauce pan for 3 minutes, stirring constantly, and then chill it. The nuts are optional. Notice that you get less than 1/2 fat Exchange per serving (2 grams of fat.) The nuts are cholesterol free. And if you omit
the nuts, the recipe is fat free. |
