Preparation time: 5 minutes, Servings: lots and lots!

Ingredients:
- 2 Tbsp. chili powder
- 2 Tbsp. cumin powder
- 2 Tbsp. ground coriander
- 2 Tbsp. dried basil
- 1 Tbsp. dried oregano
- 2 Tbsp. parsley flakes
- 1 tsp. ground cinnamon
- 1/4 tsp. to 1 tsp. ground cayenne pepper, (optional) (for mild or hotter blend)

Preparation:
- Measure all spices into a bowl.
- Stir to blend.
- Store in air-tight bottle or jar. Perfect in yogurt to make a dip, put into the Easy Black Bean Soup recipe for old fashioned slow-cooked flavor.

This is Chris' (the editor of TowneDigest) own blend of spices. I find it extremely handy to have in a jar on my spice shelf. In an instant I can add a very tantalizing and hearty flavor to almost anything. The amazing thing about this blend of spices is that it changes its character for everything it touches.

I will use it sprinkled on chicken cutlets baking in the oven for a smoky flavor or I'll add it to a quick marinade for Barbeque or grilling. I'll use this blend in a meat loaf, either beef or turkey. I even add it to straight unflavored yogurt for an effortless low fat dip for a party (you'll find that recipe in the appetizer section). This blend even adds a special, and, again different, flavor to pork chops baked in the oven. Finally, I use this spice blend right out of the bottle when I make a quick chili. In the Soup and Salad section of this book, though, you'll find a special recipe for chili with black beans that doesn’t use this blend.

Take the time to get the spices that you are unaccustomed to. Then take 5 minutes to measure out the recipe. Pour your blend into a jar with a air-tight lid or use several empty spice containers that have already been cleaned. Bottling this blend in empty spice bottles and adding a ribbon makes a great holiday gift or housewarming present.

NOTE: I often buy spices at an Indian grocery or other ethnic grocery because you find larger packages for a much lower price than you would pay in the supermarket!.
