Yogurt Bread
a Variation of Irish Soda Bread

Ingredients |

- Preheat oven to 350 degrees.
- Sift together flour, baking soda and salt.
- In separate bowl mix together honey and yogurt.
- Combine all ingredients. Add more flour, if necessary, until the
dough holds together.
- Turn out onto a floured pastry cloth or board. Knead the dough for
about 3 minutes. (You can also use a mixer with a dough hook or a
Cuisinart to combine all ingredients AND knead the dough -- all in
one bowl.)
- Shape a round loaf. Place on a "Pam sprayed and floured" cookie
sheet. With a knife, cut a cross through the top of the bread from
one side to the other (this allows it to rise).
- Bake at 350 degrees for 1 hour or until the bread sounds "hollow"
when knocked and a cake tester comes out clean. |

- 3 3/4 cups unbleached wheat flour or whole wheat flour. (Or use
a combination of rye and oat and/or corn flours.)
-2 tsp. baking

-1/2 tsp. salt
(optional)
-1 tsp. natural
honey.
-2 cups natural plain yogurt (whole milk variety is best).

Easy, absolutely delicious, yet lower in calories, and because
it has no yeast, it is perfect for the person who follows a
Candida Albicans (yeast) modified diet.
Lower fat and cholesterol, so serving sizes are larger.
This bread recipe can be modified many ways with the addition
of cinnamon and raisins, or caraway seeds, or sun-dried tomatoes
and a little sheeps milk Romano cheese, for example. Be
creative and use the basic dough recipe to make small round
bread rolls or twisted breads or bake the dough in a oblong
bread pan for a traditional shaped loaf. Vary your baking time
accordingly, less time for smaller breads, etc.
NOTE: This bread freezes beautifully so try freezing slices
for those rushed times.
